These nachos are a great alternative to nachos made with chips. You’re saving almost 500 calories!!

Bell Pepper Nachos

Ingredients
– 1/2 medium onion chopped
– 1 lb lean ground turkey
– package taco seasoning mix (or mix your own)
-
 2 medium bell peppers, cut into 1-inch wide slices
– 1/4 cup shredded sharp cheddar cheese
– 1 medium jalapeño, seeds and veins removed, sliced (optional)
– 1/2 cup pico de gallo (or fresh tomato salsa)

Directions
1. Preheat oven to 375° F.

2. Add onion to saucepan over medium-high heat, stirring frequently, for 4 to 5 minutes, or until onion is translucent.

3. Add turkey; cook, stirring frequently, for 4 to 5 minutes, or until turkey is no longer pink.

4. Add taco seasoning blend and mix well.

5. Arrange peppers in an oven-proof baking dish; top with turkey mixture and cheese.

6. Bake for 5 to 8 minutes, or until cheese melts.

7. Divide pepper mixture evenly between four serving plates.

8. Top with jalapeños and pico de gallo; serve immediately.

On August 11th I joined the Dirty 30 club! My friends and I celebrated by going on a Peddle Pub Crawl dressed up 80’s style to flashback when I was born! It was so much fun and everyone should do it at least once in your lifetime!!

If you are in the Houston area we rented the bike from houstonbikebar. We rode all around downtown Houston. We started at Christian’s Tailgate and ended there for some Karaoke.

It’s BYOB on the bike. Heather made these cute stickers and bought cups for everyone to drink out of!

Creamy Corn Macaroni & Cheese

Our basil has been growing out of control this year, so I’ve been using it a lot when I cook. This is such a yummy summertime recipe! My hubs and I actually prefer to eat it cold versus warm! I mean, it’s good either way, so you decide!🙂

Creamy Corn Mac & Cheese

– 10 ounces medium-sized dry pasta shells
– 2 tablespoons butter
– 2 cups corn kernels
– 1/4 cup heavy cream
– 1 cup torn fresh basil leaves, divided
– 1/2 cup freshly crumbled feta cheese, divided
– red pepper flakes
– salt, to taste

1. Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook according to package directions. Reserve 1/2 cup cooking water, then drain the pasta; set aside.

2. Melt the butter in a large skillet over medium heat.

3. Add the corn and cook, stirring frequently, for 2 minutes.

4. Add the reserved pasta water, pasta shells, cream, and half of the basil and cook, stirring occasionally, until thickened, about 3 minutes.

5. Stir in half of the feta and mix until creamy and the shells are coated, about 2 to 3 minutes more.

6. Remove from the heat and season with salt.

7. Top with remaining feta, basil, and red pepper flakes. Serve immediately.

Yoga & Hops - Astros game

The first week in August, we took another Yoga & Hops class – but this time, we were at the Astros game!!! An hour before the game started, we lined up on our yoga mats and began. At first, it was a little weird because the people arriving to the stadium stopped and starred at us, but then we got really into the vinyasa and forgot all about them! After downward dogging and a lot of low lunging, it was finally time for a beer; we were conveniently next to the Saint Arnold stand! After we got our beer, we headed up to our seats and enjoyed the rest of the game. The Astros may have lost to the Blue Jays (4-1) that night, but the whole Y&H experience was a win!

Cobb Salad

Salads are one of our favorite things to eat in the summer. Last week, we both made this Cobb Salad and now we’re obsessed. We’ve already made it a few more times!

Cobb Salad

Ingredients for Cobb Salad
– 2 cups lettuce
– 1 hard-boiled egg, cut into quarters
– 1 slice of turkey bacon
– 1 tbsp chopped avocado
– 1 tbsp cheese (I used feta)
– 2 tbsp Lemon Dijon salad dressing

Directions
1. Place lettuce in a bowl and top with all ingredients.

2. Drizzle dressing on top and serve!

Ingredients for Lemon Dijon Salad Dressing (21dayfix – 1O)
– 1 large egg yolk
– 1 tbsp dijon mustard
– 1/4 tsp sea salt
– 1/2 tsp ground black pepper
– 4 tbsp fresh lemon juice
– 1 1/2 tsp chopped lemon peel
– 1/4 cup evoo

Directions
1. Place egg yolk, mustard, salt, pepper, lemon juice and lemon peel in a blender. Blend until smooth.

2. Slowly add the oil, blending until well blended.
