1st week is almost done and I want to share what I ate for dinner before you go to the grocery store to meal prep for week 2! Container counts are included.

Ground Turkey Taco Salad

Ground Turkey Taco Salad
2 greens, 1 red, 1 blue, 1 orange

Ingredients
– 1 lb. of ground turkey
– romaine lettuce
– spinach leaves
– tomatoes
-avocados
– salsa

Seasoning Ingredients
– 1 Tbsp. chili powder
– 2 tsp. ground cumin
– 1/2 tsp. onion powder
– 1/2 tsp. garlic powder
– 1/2 tsp. dried oregano
– 1/2 tsp. paprika
– 1 tsp. sea salt

Instructions
1. In a skillet brown ground turkey.

2. When all the ground turkey is brown, drain excess grease.

3. Add seasoning ingredients and let sit on low to warm.

Meatballs and Roasted Sweet Potatoes

Meatballs and Roasted Sweet Potatoes
2 1/2 meatballs = 1 red, 1/2 yellow
sweet potatoes= 1 yellow

Ingredients (Meatballs)
– 1 lb. ground beef
– 1 tsp. paprika
– 1 egg, beaten
– 3/4 cup quick oats
– 2 tsp. minced garlic
– 2 Tbsp. tomato sauce

Instructions
1. Preheat oven to 400 degrees.

2. In a medium size bowl mix all ingredients together.

3. Spray a baking dish with non-stick cooking spray.

4. Use a Tbsp. to form balls with mixture and place in baking dish.

5. Bake for 15-20 minutes.

Ingredients (Roasted Sweet Potatoes)
– 2 medium size sweet potatoes, diced
-1 tsp. olive oil
-1 tbsp. chili powder
-1 Tbsp. of cinnamon

Instructions
1. Preheat oven to 400 degrees.

2. Put sweet potatoes in large bowel.

3. Drizzle with olive oil.

4. Throw in your chili powder and cinnamon.

5. With a spoon mix till all sweet potatoes are coated.

6. Place on a baking sheet and cook for 30 minutes.

Turkey Chili

Turkey Chili
1 cup = 1 red, 1/2 green, 1/2 yellow

Ingredients
-1 lb. ground turkey
-1/2 cup finely chopped red pepper
-1/2 cup finely chopped green pepper
-1/2 cup finely chopped white onion
-3 tsp. minced garlic
-1/2 tsp. ground cumin
-1 1/2 Tbsp. chili powder
-1/4 tsp. cayenne pepper
-1 15oz. can of diced tomatoes
-1 can of ranch style beans
-1/2 cup green onions
-cheese optional (blue)

Instructions
1. In a 3 qt. pot brown turkey meat, drain excess grease.

2. Add your red and green peppers, white onion, seasonings, tomatoes, and beans. Let simmer for about 30-45 minutes on low.

3. When warm garnish with green onions.

Banana Oatmeal Cookies

Banana Oatmeal Cookies
2 cookies = 1 yellow container

Ingredients
-1 cup old- fashioned rolled oats
-2 tsp. ground cinnamon
-1/4 tsp. sea salt
-2 ripe bananas, mashed
-1/4 cup raisins
-1/4 semisweet chocolate morsels

Instructions
1. Preheat over to 350 degrees.

2. Lightly spray baking sheet with nonstick cooking spray.

3. Combine all ingredients into bowl, mix well.

4. Use Tbsp. to measure cookies and drop onto baking sheet. Flatten cookies out with spoon.

5. Bake for 14-15 minutes.
