Recently my husband made this amazingly simple pot roast. It was really good and we had leftovers for several days. This is a great meal if you are having guests over.

Pot Roast with potatoes and carrots

– 2 1/2 lbs. chuck roast
– 6 red potatoes
– 1/2 bag of baby carrots
– 1/2 onion (chopped)
– 1/4 cup vinegar

1. Start with the leanest cut of chuck roast.

2. Cook the roast at 280 degrees covered in the oven with some vinegar and water in the bottom of the pan until the roast reaches around 150 degrees in the thickest part. Normally for a three pound roast it takes about 3.5 hrs.

3. During the last 30 minutes add in your veggies to the roasting pan.

Voila, you are all done…this can also be accomplished in your crock pot just as easy.
