I use this sauce for chicken enchiladas too! Both are amazing.

Ingredients
– 12 flour tortillas
– 1 1/2 cups shredded monterey jack cheese
– 1 tbsp butter
– 1 small onion, minced
– 2 garlic cloves, minced
– 1 lb mushroom, chopped
– 1/4 cup white wine
– 12 oz fresh spinach, washed, drained and coarsely chopped

Directions
1. Heat butter in a large skillet over medium heat and saute onions, garlic and mushrooms until soft and liquid has evaporated, about 5 to 7 minutes.

2. Add wine and cook for 2 more minutes.

3. Add spinach and cook until it is wilted and liquid has evaporated.

4. Add salt to taste.

5. Roll the spinach mixture inside a tortilla with cheese. Place in greased baking dish and continue until you run out of mixture.

6. Top rolled tortillas with Cilantro Cream Sauce and sprinkle with cheese.

7. Bake for 350ºF for 20 minutes.

 

Cilantro Cream Sauce

Ingredients
– 3 cups sour cream
– 1/4 cup chopped onion
– 1/4 cup chopped cilantro
– 2 tbsp minced garlic
– 1 tsp salt
– 1 tsp sugar

Directions
1. Combine above ingredients and mix.
