This bread is so yummy.  I made this at Thanksgiving and it was a hit.  It’s great to serve for breakfast. This would be great for Christmas morning!

Cranberry Pumpkin bread

– 3 cups flour
– 1 tbsp. plus 2 tsp. pumpkin pie spice
– 2 teaspoons baking soda
– 1 1/2 tsp. salt
– 3 cups granulated sugar
– 1 15 oz. can Libby’s Pure Pumpkin
– 4 large eggs
– 1 cup vegetable oil
– 1/2 cup orange juice
– 1 cup dried cranberries (you can add another 1/2, if you prefer)

1. Preheat oven to 350 degrees. Grease and add flour to 2 loaf pans.

2. Combine four, spice, soda, and salt into bowl.

3. In another bowl combine sugar, pumpkin, eggs, oil, and juice into mixer bowl. Stir well.

4. Add pumpkin mixture to flour mixture. Blend.

5. Fold in cranberries.

6. Bake for 60-65 minutes. When done check the middle with a toothpick to make sure it comes out clean. If not, add another 5-10 minutes. Cool on wire rack for 10 minutes.
